If only Chipotle set up shop in your house eh? Well, I can’t make that happen but I CAN teach you how to make one of their most popular menu items — fajita veggies — in your own kitchen. It took a while (and maybe a few burnt onions) to get it right but I think you’ll approve of our efforts once you try this mix of sizzling red onions, a party of colorful bell peppers, and hearty Portobello mushrooms.

Of course! They’re veggies, after all, right? With colorful bell peppers and superfood status Portobello mushrooms, these fajita veggies are a vitamin powerhouse. And did I mention we’re drizzling everything in olive oil that loves your heart? To finish it off, we’ve added a range of spices — cumin, paprika, oregano — that will promote digestion, introduce antioxidants to your diet, and taste great while doing it.
INGREDIENTS
Ready to make a healthy yet delicious Tex-Mex feast? Here’s what you’ll need.
- 2 tbsp olive oil
- 1 red onion
- 3 portobello mushrooms
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 tsp cumin, ground
- ½ tsp paprika, smoked
- 1 tsp oregano, dried
- ½ tsp Chipotle pepper

You can prep these yummy fajita veggies ahead of time by doing all the slicing at your convenience then storing them in an airtight container. Or you can cook them THEN pop them in an airtight container. The same method of preservation applies to leftovers. They’ll be good for up to 3 days in the fridge. When it’s time to eat once more, toss the veggies in a warmed-up skillet or heat them up in the microwave (though they’re straight-up magic when you eat them fresh out the skillet).
