For me, it’s all about taking the time and care to assemble the multitude of ingredients, letting the broth simmer so that the entire house is filled with its aroma, spending hours contemplating toppings, then digging into a soup so thick and hearty, I don’t need to serve anything with it.

The hardest part is deciding which soup to give “the Saturday treatment”. More times than not, though, I go for this Creamy Potato Soup. First, creamy soups lend themselves to long simmers. Second, potatoes are a naturally hearty vegetable that will help thicken the broth without even being asked to. Third, there are several great options when it comes to toppings, so this soup gives you a chance to get creative and personalize it. What more could you ask of a soup? Or a Saturday??

Potatoes are full of carbs, fiber, vitamins, and minerals, and so, are a great vegetable to base a soup on. For the rest of the ingredients, I’ve opted for health-conscious versions. So I use turkey bacon, which is better for you than pork bacon; whole wheat flour instead of all-purpose; and Greek yogurt instead of sour cream, so you get a dose of protein in your soup. Depending on your dietary priorities, you can take or leave these alterations. Substitute the whole wheat flour with a gluten-free blend to make it gluten-free; omit the bacon to make it vegetarian.
