This recipe tastes even better when making your own roasted red peppers. So, if you want to roast your own, the process of roasting peppers is simple enough:

  • Wash and dry the peppers
  • Cut into flat pieces and remove the core and seeds
  • Place peppers skin side up on a greased baking sheet and broil until the skin chars
  • Remove from broiler and peel away the skin
  • Store cooled roasted peppers in a plastic bag or airtight container

What Is Aquafaba?

Aquafaba is the liquid in a can of chickpeas. Until recently, I always drained the liquid down the sink. I know better now because aquafaba is a fantastic substitute for egg whites. Aquafaba is also a perfect meringue substitute since it can whip into stiff peaks. It can also be used in macarons, frosting, mayonnaise, ice cream, baked goods, and more. I recommend buying low-sodium chickpeas in a BPA-free can when using their liquid.

How to Make Ahead and Store

If roasting peppers at home, you can make those a day or two ahead of time. The hummus can be prepared ahead of time because it remains fresh in the refrigerator for up to 7 days in an airtight container. You can freeze it for up to 3 months in a freezer-safe container. I recommend freezing hummus in ice cube trays and placing the frozen cubes in a zipper freezer bag for individual snack portions. Thaw frozen hummus in the fridge before use.

Does It Matter What Type of Olive Oil I Use?

Because you are only using a drizzle of olive oil over the top, it is best to use high-quality extra virgin olive oil. I recommend olive oils from Greece, Italy, or Spain. I keep a small bottle of imported olive oil for this purpose. It’s not for cooking, only for the finishing touches of special dishes. The taste makes a tremendous difference.

What Are the Best Dippers to Serve with Red Pepper Hummus?

Toasted pita bread, crackers, bagel chips, and vegetables are all good for dipping. Gluten-free crackers or toasted bread are good to have on hand when putting out regular wheat bread or crackers. My favorite veggies for hummus are jicama slices, zucchini, yellow squash, broccoli, cauliflower, radishes, carrots, cucumbers, celery, and asparagus spears. If you have never tried jicama slices with hummus or guacamole, you don’t know what you’re missing.

Ingredients

  • 1 15-ounce can chickpeas, drained and rinsed (liquid reserved)
