Cobblers are heavenly and one of my most beloved desserts. Juicy peaches mixed with sugar and spice then topped with everything oh-so-nice. A buttery biscuit-like crumble completes this recipe and is by far my favorite part. This dessert is sure to satisfy and bring so much delight to the table. It’s also entirely vegan, and can easily be created using a variety of fruits. I find myself making this cobbler all year round, not just in the summertime. I think it’s due to how easy it is. Quick, simple and fresh. Cobblers can be made using just one bowl and often call for ingredients I already have at home.

Is Vegan Peach Cobbler Healthy?

For a dessert, this recipe is on the cleaner side. It takes advantage of seasonal peaches, which are high in vitamin C and fiber. Cinnamon is an anti-inflammatory while nutmeg is an antioxidant, so they both bring more than just that delightfully warm and rich flavor. You can also use oat flour for a whole grain option and maple syrup in place of the cane sugar. If you prefer a more crumbly top, use whole oats and skip the flour. The use of oats makes this recipe gluten-free and a source of vitamins, minerals, fiber, and antioxidants.

Set your peaches up for success

Peaches are round, stone fruits with juicy, yellow flesh and silky, pinkish-orange skin. They are delicious and usually harvested from mid-July to mid-September, making August National Peach Month because it’s at the heart of the peach harvest. With that said, you can always use frozen peaches but please try and avoid canned. The problem with canned peaches is the texture; the fruit is beaten down, overly ripe, and often processed with added sugars. A crunchy, firm peach caramelizes and bakes best in the oven and can withstand the heat. I recommend you use yellow or donut peaches, though white peaches and nectarines will do in a pinch.

  • 6 large peaches, peeled and sliced
  • 1/2 cup organic cane sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk
  • 1/4 cup coconut oil, melted
  • 1 teaspoon pure vanilla extract

Prep

Grease the baking dish, preheat the oven, and mix peaches with spices.

Mix

Whisk dry ingredients, and add wet ingredients to form the batter.

Bake

Top peaches with batter, and bake until golden.

How do I prep and store this cobbler?

Prepare the peaches by peeling, pitting, and slicing them. Then mix in the rest of the filling ingredients and give them a quick toss. Store your filling in the refrigerator and begin preparing the crumble top. You can use a food processor to blend the ingredients together but not necessary.
Place the crumble topping on a baking sheet lined with parchment paper and freeze until ready to assemble. Preheat the oven to 375°F and place the frozen crumble over the peach mixture. Bake until the top is golden and the peaches are bubbling over. Store leftovers in the fridge for 2 to 3 days and reheat in a 350°F oven for about 10 minutes when ready to enjoy again.

Citrus zest is best

Sprinkle about a teaspoon or so of unrefined coconut sugar to the top of your crumble for a delish caramelized finish.

Caramelized fruit paired with itty-bitty crunchy tops and fluffy, melt-in-your-mouth peaches is a flavor-filled combo that demands seconds, sometimes thirds. Because of this, I try and make it when I know others will be joining me (otherwise I am tempted to eat too much of it myself).

Scoop and serve with store-bought or homemade vegan vanilla ice cream for a delightful pairing. Just make sure to serve your cobbler warm for best results. The ice cream melts into the crumble and fills your mouth with a hot and cold sensation. It is scrumptious. You can also top with some fluffy vegan whipped cream or serve on its own.
