Greek Salad Dressing

This Greek salad dressing is as easy to make as it is versatile. All you need for the base is olive oil, red wine vinegar (or apple cider vinegar if you have a sweet tooth), lemon juice, and Dijon mustard. Simply mix with garlic, oregano, salt and pepper, and ta-da! This zingy flavor combo goes well on everything from marinated meat to crisp salad. No matter what you’re serving it on, this dressing doesn’t disappoint.

It’s one of my favorite dressings to make, and I like to keep it around for the whole week. By the end of the jar, I’m scraping it with a spatula to get every drop! I like to incorporate it into all my salads, whether they’re Greek or not. My next kitchen masterpiece will be a Greek panini with this dressing as a crafty condiment.

Is Greek Salad Dressing Healthy?

Greek style is one of the lightest and brightest vinaigrettes you could make. Olive oil is a healthy fat with many benefits, including heart health. Garlic and lemon have been known to boost the immune system and cleanse the gut, especially when paired together. Made without preservatives or processed sugar, this wholesome dressing recipe will save you from store bought belly aches and overpriced jars. If you’re seeking a flavorful sauce that satisfies both cravings and nutrition, this is for you.

My Big Fat Greek Salad Twist

While this sauce is boss on its own, I like to put a fun spin on it by exchanging some ingredients and adding others. Apple cider vinegar is a gut-saving superfood, so I like to use it instead of red wine vinegar. This also makes it sweeter and tangier. While I enjoy balsamic vinegar for its dark, earthy tones and deep sweetness, I’d typically change it entirely to an Italian dressing. I’ve also used tahini (sesame seed butter) instead of Dijon mustard, but you can use 1/4 teaspoon of each for some nutritious nuttiness. Lastly, if I want to kick it up a notch, I’ll add 1 teaspoon of cumin and 1/4 teaspoon of freshly ground white pepper. You’d be surprised by how much of a game-changer seasonings can be!

FAQs & Tips

How to Make Ahead and Store

This dressing is ideal for making in big batches and storing in the fridge. In well-sealed jars, it will last for 1-2 weeks. While the first week is the freshest, the second week can be as delightful if you freshen it up with a few shavings of lemon zest and an extra crack of black pepper. Keep in mind that it will separate slightly in the fridge, so give it a good shake before serving.

Greek vs. Italian?

Italian and Greek dressings are quite similar in that they are both typically vinaigrettes, made with a base of vinegar and oil, and flavored with herbs. Italian dressing usually includes a mix of herbs like oregano, basil, and parsley, giving it a light, tangy, and herbaceous flavor. Greek dressing, while also oil-based and similar in composition, often features olive oil, red wine vinegar, lemon juice, and oregano. Both dressings are light and tangy, but Greek dressing can sometimes be slightly thicker if ingredients like feta cheese or yogurt are added, although this is more of a variation than the norm.

What’s in a Greek Salad?

Traditional Greek salad combines sliced cucumbers, tomatoes, green bell pepper, red onion, olives, and feta cheese. One of my dear friends also loves to make this salad with chickpeas for extra protein and heartiness. Garnish with a sprig of fresh mint, and you’re good to go!
