I used to hate Brussels sprouts. I thought they tasted bitter, but it turns out, I just didn’t know how to make them! In fact, these little green balls of goodness are yummy and the perfect catalyst for marinades and seasonings. Since backyard grilling season is in full swing, these Brussels sprouts are my new fave. They’re ridiculously simple to make and a sure crowd-pleaser.

When grilled, these Brussels sprouts are savory and with just a hint of sweetness and tang, complemented by the zest of garlic and mustard. And, of course, the grilling process adds a smokiness, leaving the Brussels sprouts crispy on the outside and tender on the inside. Are Grilled Brussels Sprouts Healthy?

Brussels sprouts are a nutritional treasure trove. They’re loaded with fiber and are low in carbs. What’s more, just one cup of Brussels sprouts meets the daily recommendation for vitamin C. You really can’t go wrong with this veggie; however, this recipe does contain soy sauce. If you’re watching your sodium intake, you could use coconut aminos instead.

The art of marinating 

When it comes to meats, marinades are discussed ad nauseam, but what about vegetables? I’d argue that marinating veggies is just as important and nuanced. Marinades transform simple vegetables, elevating their flavor. The marinade for this grilled Brussels sprouts recipe is a savory blend of balsamic vinegar, Dijon mustard, minced garlic, and soy sauce. This mix infuses the Brussels sprouts with umami, enhancing this versatile vegetable’s natural flavor.

While my recipe doesn’t call for it, marinating for as long as possible is never a bad idea. Also, my marinade doesn’t use white vinegar or citrus juices, so you could ideally soak your Brussels sprouts for a few hours without worrying they’ll turn to mush. The longer marination time lets the marinade penetrate more deeply into the sprouts, making them tender and more flavorful. Even better, the sprouts’ exterior will caramelize beautifully under the grill’s high heat.

  • 1 pound Brussels sprouts, uniform in size
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce (or tamari for gluten-free option)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Wood or metal skewers

INSTRUCTIONS

Prep Skewers

Soak wooden skewers to avoid burning. Metal skewers are ready to use.

Soften Sprouts

Trim Brussels sprouts, microwave to soften, and let cool.

Heat Grill

Set your grill to a medium heat or set up your grill pan or broiler.

Marinate

Toss Brussels sprouts in a flavorful marinade until well coated.

Skewer

Arrange sprouts on skewers, keeping similar sizes together, and save the extra marinade.

Grill

Cook skewered sprouts on the grill, turning once, until they’re perfectly charred.

Serve

Remove from skewers, dress with the leftover marinade.

How to Make Ahead and Store?

While these taste best the day of, they can be stored in the fridge for up to four days. They’re actually pretty good cold, too. I like to top them on salads.

Could I make this on the stove instead?

You could, but the texture and caramelization will be different. You might want to use the oven instead, preferably at a high heat, like 450°F.

Is it okay if the Brussels Sprouts are different sizes?

You’re going to want them to be fairly similar in size so that they cook evenly on the skewers.

Ingredients

  • 1 pound Brussels sprouts uniform in size
