It’s Friday, Friday, gettin’ down on Friday!

Is my age showing? Do you hate me because I know you’ve now got that catchy-but-terrible Youtube sensation song stuck in your head for ALL the evers.

SO. FREAKING. CATCHY.

Ahnnyyyways. Friday. You know what is really good about Fridays?

Well, besides the fact that it signifies the commencement of WEEKEEND goodness, that is?

Fridays are also the greatest day EVER for pizza.

Unless you’re a crazy person food blogger like myself. Than any day that a recipe is a disaster is good for pizza.

But, that is neither here nor there.

Now. Today is Friday. But, a Friday in January. Which means ya’ll are working HARD at the gym and eating all your kale and quinoa goodness amIright? 😉

I wouldn’t want to be the meanest person to ever exist on the face of the EARTH and throw some calorie bomb ‘za at ya.

That’s like when you put some majorly delicious people food right up to your dog’s nose and, when they go to bite it, you pull it away and shove it in your mouth and go “HAHA SUCKS TO BE YOU. You don’t have opposable thumbs to grab it away before I can eat it!”

Or is that just me?

Don’t answer that.

So. Back to not-being-a-mean-pizza-person.

I actually made these pizzas a LONG TIME AGO. Like months and months (so excuse the photos) but was waiting for the perfect time to share them. And now is that time.

Ya’ll know that I am a HYOOGE fan of egg whites. Especially when you cook them in a tortilla form and pass them off in all your favorite comfort food dishes to make them all squeaky clean and full of light and healthy numminess. Kiiinda like those healthy low carb chicken enchiladas.

SO, they’re back. Back again.

Except no longer are we stuffing them with things and rolling them up. We’re crust-i-fying them and piling all our favorite pizza toppin’s on ‘em.

BECAUSE WE CAN.

And because it’s GOOD FOR US. And actually tastes like pizza.

The Huberoni even said so. And he doesn’t care one iota about nutritious low-calorie foodiness. If it tastes bad, that man won’t touch it with a 10 foot pole no matter how many times I say “but it’s good for your body and is gluten free and high protein and blah blah blah.”

A girl can try.

The best thing about these (SUPER EASY) pizzas is that you can totally customize them to whatever topping makes your heart go WHOOP WHOOP. <–Exactly like if you make keto low carb pizza meal prep bowls!

No longer must we use that totally over-rated thing called “self-control” and only shovestuffcram our face full with ooey-cheesy-pizza-ness on Friday’s.

Crustless Pizza Recipe

Crustless Pizza gives you an incredible, gluten free option. And amazing taste!

Ingredients

  • 8 Egg Whites Divided, or 1 cup of liquid egg whites
  • 2 tablespoons Reduced Fat Grated Parmesan Cheese
  • 1/2 teaspoon Italian Seasoning
  • pinch of Salt
  • Pizza Sauce and Toppings of Choice I used 2 tablespoons pizza sauce and 1/4 cup turkey pepperoni
  • 1/2 cup Reduced Fat Mozzarella Cheese Grated

Instructions

  • Preheat your broiler and spray a baking sheet with cooking spray. Set aside
  • Spray a small, non-stick, frying pan with cooking spray and heat on high.
  • Once hot, turn down the heat to medium/low and slowly pour 1/2 cup of liquid egg whites in, covering with a tight fitting lid. Cook until the top of the whites are just set and slightly bubbly (about 2-3 minutes).
  • Remove the lid, carefully flip the egg whites and cook for an additional 2-3 minutes, or until the “tortilla” is cooked.
  • Slide onto a plate and repeat with the remaining 4 egg (1/2 cup) of egg whites.
  • Transfer each “crust” to the prepared baking sheet and sprinkle each with 1 tablespoon of grated parmesan cheese, 1/4 teaspoon of Italian seasoning, and a pinch of salt. Spreading the mixture out to cover each crust.
  • Adjust your oven rack to the very top position and place the broil the crusts until golden brown and crunchy, about 7-10 minutes. They burn easily so watch them closely!
  • Take the crusts out of the oven and top with pizza sauce, toppings and cheese.
  • Broil for an additional 2-3 minutes until the cheese is melted and golden.
  • Serve immediately.
