Settle the debate: Healthy ginger snaps OR sugar cookies? Which would you choose?

Mr. FFF is all in on ginger snaps (bonus points if you make healthy ginger snaps with caramel and apples or chocolate hazelnut healthy ginger snaps!) but me? I like the classics.

Which is why I am all about sugar cookies, preferably with icing, though these thick chewy sugar cookies honestly don’t even need that.

File that under things I thought I would never say.

Are Low-Sugar Healthy Sugar Cookies Healthy?

When it comes to baking for your gatherings, sugar cookies are a must-have. They’re soft, they’re sweet, everyone loves them- yeah, they pretty much hit all the points when it comes to the perfect party goodie, just like my Paleo Healthy Gingerbread Cookies. Did you know that you really can have all that sugar cookie goodness and swap out some ingredients so that they’re better for you? It’s true!

All-Purpose Flour – Instead of the usual white flour, this recipe uses whole wheat pastry flour. This makes it have more fiber that helps in healthy digestion. 

Refined Sugar – I have also substituted white sugar for raw organic cane sugar and baking Stevia, which are healthier ingredients, yet still bring all the sweetness. Examples of popular keto sweeteners are erythritol, monk fruit, and the aforementioned Stevia.

Egg – if you want to make these eggless, use the oil mix from my eggless sugar cookies!

How to properly measure flour

You may have never thought that measuring flour was of much importance. However, flour can be packed, sifted, or fluffed up before use and it can really make a difference in how your recipe turns out! Here’s the best way to measure flour when you are baking these cookies, or any other cookies similar to these, such as Gluten Dairy Free Sugar Cookies. You need to:

  1. Use a spoon to mix around the flour in the container, and lightly fluff it up to loosen it.
  2. Use a spoon to scoop the flour into the measuring cup (do not use the measuring cup itself)
  3. Using a straight-edged utensil such as a butter knife, level the flour across the top of the measuring cup.

Ingredients

  • 1 1/2 Cups Whole wheat pastry flour (180g)
  • 2 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 Cup Unsalted butter, at room temperature
  • 1/4 Cup + 2 Tbsp Raw organic cane sugar
  • 1/3 Cup Baking stevia
  • 1 Large egg
  • 1 Egg yolk
  • 2 tsp Vanilla extract
  • 1/2 tsp Almond extract

Instructions

  • Preheat your oven to 350 degrees and line 2 cookie sheets with parchment paper.
  • In a medium bowl, whisk the flour, starch, baking soda and salt.
  • In a separate large bowl use an electric hand mixer to beat the butter, 1/4 cup of the sugar and the stevia together until well mixed. Add in the egg, egg yolk and extracts and beat until well combined.
  • Stir the flour mixture in. Cover and refrigerate 15 minutes.
  • Once chilled, use a cookie scoop to form into 1 Tbsp sized balls and roll each ball into sugar. Place onto the prepared pans and press out just under 1/2 inch thick.
  • Bake until the top feels set, about 10-11 minutes. Then cool on the pan COMPLETELY (they set up a lot)
  • DEVOUR!
