The reason why store-bought juices aren’t all goodness in a bottle is because they often only provide filtered fruit puree or concentrate without any of the whole-fruit particulate (that’s pulp, seeds, and rinds) in their final product. Those particulates actually contain much of the nutritional value in fruit juice as well as the fiber you’re missing by drinking your fruits rather than eating them whole.

Prepare

Rinse strawberries thoroughly, keeping stems for nutrients or removing them if preferred (though the leaves have antioxidants, too!)

Juice 

Process strawberries in a juicer or blend. Strain for a smooth juice, if preferred (but you’ll lose your particulates!)

Serve 

Enjoy the fresh strawberry juice immediately or chilled.

How to Make Ahead and Store?

Fresh fruit juice stores wonderfully and can be made with little effort! Once your juice is blended/processed, pour into a resealable bottle or jar and put into the fridge for an anytime refresher that’s great for you!

Does it matter how ripe my strawberries are?

Blending your strawberries yourself means you can pick precisely which strawberries go into your fruit juice! If you don’t mind slightly green strawberries, you do you; however, bear in mind that the flavor profile of the fruit you select for your juice will be the same as your final product. If you pick unripe bananas for a banana smoothie, you can expect it to be less sweet – the same principle applies for juice!

Can I filter my particulates out of my juice and add them back later?

That’s totally an option! Many people want their juice to be smooth and consistent, others prefer it pulpy! While most of the health benefits are going to be found in the particulates optionally filtered out in step 2, you can add those particulates back to a glass of juice with a quick stir to agitate and re-suspend the semi-solids.

What are some good fruits to make juice out of?

Any fruit can be made into a delicious juice, it just depends what you like! Always ensure that the best parts of your fruit are what you’re drinking and, where possible, include seeds and cores (but, notably, not the pits of stonefruit like cherries and apricots!) into your juicer!

Ingredients

  • 2 lb strawberries

Instructions

  • Rinse the strawberries thoroughly under cold water. Optionally, you can remove the green stems if preferred, but they are are entirely edible and packed with nutrients.
  • If using a juicer, feed the strawberries through the juicer according to the manufacturer’s instructions and collect the juice.
