If you enjoy Alfredo but want less cheese and more cream, this is the sauce for you! As a light and easy drizzle, it goes well on nearly anything—pasta, pizza, soups, sandwiches, even salads. This recipe is great for novice cooks to add to their culinary toolbox because you can use it as is or tweak the sauce to your liking.

With such a smooth and mild flavor, white sauce is agreeable for most palates. You can also spice it up with a dash of smoked paprika. Dressed up or dressed down, this sauce is the star of the show. So don’t be surprised if your friends and family ask you to make it again and again!

Is White Sauce Healthy?

Compared to store-bought sauces, this homemade version is far more wholesome and offers plenty of wiggle room for adjustments. It’s also vegetarian. Want to make the sauce vegan? Simply use plant-based butter and milk! For gluten-free folks, I recommend using a mix of cassava flour and tapioca starch to thicken the sauce.

This Sauce will Make You “Roux” The Day!

Originally used in 17th century French cooking, roux is a thickener made of butter and flour used today in all kinds of dishes, from pasta sauce to pie filling. While it’s usually used as a base that can be built on with melted cheese, fresh herbs, and garlic (such as with Alfredo), this particular type of roux is down-and-dirty, simple, and so easy to replicate.

INGREDIENTS

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 cup milk

Melt

Melt butter in a saucepan.

Whisk

Combine flour, cook until golden.

Thicken

Gradually add milk, whisk until smooth.

How to Make Ahead and Store

While I definitely recommend enjoying this sauce fresh for the most satisfying experience, leftovers can be stored in a well-sealed refrigerated jar for up to 5 days. Reheat on the stove until it starts to simmer.

Other White Sauces?

There are three main types of white sauces that cooks usually make. This basic white sauce (also called béchamel) is the simplest of the three. The others are mornay or cheese sauce, which Alfredo would be considered, and gravy—a meat-juice sauce that also uses roux as a base.

Best Spices to Add?

Personally, I enjoy making this sauce with 1 teaspoon of smoked paprika and/or 1/2 teaspoon of nutmeg. It creates a nutty, smoky flavor profile. For a more “queso-like” sauce, try melting shredded white cheddar to the blend as it cooks alongside finely chopped jalapeños.
